Raspberry Cupcake Yum Note.

I love cupcakes.
I love raspberries.

Join them together and you have a plate of yum.

Cupcakes are the best. Have I mentioned that I love cake!

Cupcakes are beautiful especially to share -you will want to share these because they are so pretty.

Raspberry Cupcake Recipe:

100g of butter
2/3 cup castor sugar
2 eggs
1/2 cup milk
a good splash of vanilla
1 1/4 cups self raising flour
Raspberry puree (Found in most supermarkets, mine was in the cold veggie and fruit section)

Place all ingredients but the raspberry pure in a bowl and mix with electric beaters until just combined.
Fill your favorite patty cases with the mixture. Top each cupcake with a spoon of raspberry puree then using a knife or skewer marble or just mix the puree slightly into the mixture.
Bake in an moderate oven for 15 -20 min.
Allow to cool then serve to willing tummies, there will be lots.

Lemon Ginger Tea Note

I love lemon ginger tea.

In the morning it is a pot of sunshine and warmth - a happy morning, let's get into it joyful sigh moment.
This ramps up your liver, warms your blood ready for action, and brings taste satisfaction.

Lemon Ginger Tea:
Boil your kettle and allow to sit for around 10min.
Slice 1-2 slices of lemon and place in your fave pot (if no pot use a jug of some sort)
Grate as little or as much raw ginger as you would like to your taste and place it also in fave pot.
Pour water into pot and allow to sit for as little or as much as you want for your taste intensity.
Pour lemon ginger tea into your favorite morning cup through a tea strainer (if pot has it's own basket place ingredients in it at beginning).
Enjoy the happiness.

Wear Your Tiaras Note

I love tiaras.

Glitter and sparkles, full of jewels, place one on your head and you immediately feel so, so special and set apart. 

Yesterday I found my precious 3 yr old with not one but two tiaras on. She was beaming and I knew that she felt especially special with her two precious crowns.

I love what wearing a tiara does as it is placed on one's head. We beam and twirl as a small child or to us grown up women it allows us to feel just so beautiful. It just makes us feel  special, one of a kind, and valuable. As I looked at my little girl loving her tiaras she was so content just being what she knew she was -  doubly special.

As a grown women I find it is rather socially unacceptable to go out in public wearing a tiara in the everyday (yep). Outside of being a bride, having a random fun girls night or going to a very grand event you will not see me wearing one. If  I did  you would say I was unusual, crazy and a little lot weird. (Although please do share if you do wear a tiara out and about!)
Unable to wear a jewellery tiara does not mean that we can't still wear a tiara. I speak of wearing our God given created beauty. The truth of knowing we are special, unique, one of a kind, valuable and very diversely beautiful in the everyday. In the rush of task, washing, cleaning, work, parenting, everything and anything you find in your day we can wear this truth - it is our given glory, our crown. 
We are created beautiful, we get to be the beauty of this world and it does pours forth from our heart -us girls just can not stop what is in our hearts being poured out.  Each of us really is special, unique, one of a kind, diverse, set apart and so very valuable and that is what we can let sparkle always, at every moment, no matter what. 

The real truth for me is that I, and maybe you, probably kind of already know or have heard lots of times that we are the above - beautiful - but I don't know if we actually believe it or realize just how much beauty and value we really really are and  really really do bring to this world. Just like my daughter, instead of just one tiara of immense value we are double, triple, a thousand times more then what we think we are. We are far more then we ourselves dare to believe and we bring far more then what we ourselves can imagine. You are just beautiful beyond any compare.

Colourful Jewellry Note


I love to wear gorgeous, bright, coloured jewellery.

I am just loving all these bright and bold coloured jewels that are everywhere at the moment - how fun!
Yesterday I could not help but purchase a gorgeous bright coral pink necklace for myself and join this colour trend. 
It is bright, chunky, and really does feels fun to wear. 
I love finding pieces of jewellery that make me feel funky and are refreshing and different. 

Bright coloured jewellery is beautiful because you are the beautiful that wears them.

Lemon Poppy Seed Cake Nights

I love Lemon Poppy Seed Cake.

Do you remember having something for the first time and it was simply amazing, wondrous, beautiful?
Then for whatever reason you don't really have it again or think to have it again simply because you forget or the years roll by, then one day you suddenly remember that you liked that something from years ago...

I remember my first bite of a Lemon Poppy Seed Cake. The moist texture of the cake which was so fluffy and light, the crunch of those poppy seeds that created amazing pop in my mouth and the zing of the lemon with silky smooth cream cheese frosting. Yep heaven.

It has been forever since I have eaten this type of cake so when a friend of mine posted a picture of one she had made on Instagram the other day it jogged my memory and I just had to make one for my greedy eyes and stomach and for the past when we first met.

That night after the children where in bed and some lame but entertaining TV was on I indulged, enjoyed and remembered.

All I can say is that Lemon Poppy Seed Cake is beautiful and so is meeting once again.

Lemon Poppy Seed Cake Recipe 

This recipe is a Donna Hay basic vanilla cake recipe which I added 1/4 cup lemon juice to the milk, a grate of lemon rind and a lot of poppy seeds.

Cake Ingredients:
2 1/2 cups plain flour
1 1/2 teaspoons baking powder
1 3/4 cups castor sugar
250g butter melted
4 eggs
1 1/2 cups milk leave 1/4 cup free space for the lemon juice.
2 tsp of vanilla

Extras to make it Lemon Poppy Seed:
1/4 cup lemon juice add this to the Milk. If you want it more lemony leave out more of the milk and add more lemon juice.
Grated lemon rind
Lot's of poppy seeds.

Some icing for the top:
80g cream cheese
80g butter
2 cups icing sugar
dash of vanilla
pinch of salt

Mix flour, baking powder, sugar, butter, eggs, milk with the lemon juice, vanilla,  lemon rind and poppy seeds in a large bowl until combined. Pour into greased cake tin and cook for 30 - 35min at 160oC oven. Cool in tin for 5 min then turn and cool on wire rack.

When cool mix cream cheese icing ingredients together with an electric mixer and spread over cake. Sprinkle with more poppy seeds and even some more lemon rind.

Eat and enjoy (with or without the lame TV)

Poached Egg Fun

Have you ever marveled at how something is achieved, something seemingly easy yet you yourself are unable to do the deed that you so admire or want?

Eggs and I are like this. Yes eggs!
I love poached eggs.
I love to eat poached eggs.
I want to cook a poached egg.
I cannot.

Until... the day before. I had to master this so I went online and Curtis Stone helped me out - He's that awesome Australian chef.
Guess what? It worked - yay, yay for me.
I got my poached egg and it was the best I had ever eaten (bias much). I stared that method down and I attempted my deed of impossible and then = yum yum.

It is simply beautiful to attempt something for the first time - one poached egg.
