Lazy Summer Days and Popcorn.

How we are rounding out the last of summer:

I love popcorn.
Airy and light and very flavoursome.

Popcorn is one of my lazy summer day faves.
My kids always seem to be hungry in summer ( it's all year round) and I am always tweaking the recipe ideas for quick, relatively healthy snacks for them to munch on till the next round of "I'm so hungry" hits.

Popcorn is perfect. You can make it as healthy or unhealthy as you want, it's filling and for a added bonus it increases your fibre intake for the day = win, win!
It is quick to make and you are guaranteeing cute smiles from the children when they spy the bowl before the scoffing down by the handful begins (OK that's just me scoffing :) ).
Popcorn is great all year but I love how you can flavour it to match the summer sun then change it up for the cold of winter plus my girls just love hearing and watching it pop.

My fave summer seasoning's are:
1. A splash of warmed olive oil and dried basil leaves or coriander and basil mix.
2. Fresh summer honey drizzle in some melted butter with a squeeze of lemon and sprinkle of salt.
3. Butter and finely grated cheese and parsley.
4. Fresh summer honey in some melted butter with toasted almonds, macadamias and even some cranberries.
5. Plain old salt
6. Plain old melted butter.

Popcorn is beautiful.
